Romaine Salad with Parmesan Vinaigrette Serves 4 3 tablespoons grated Parmesan 2 teaspoons Dijon mustard 2 tablespoons red wine vinegar 1 clove garlic, minced 1/3 cup extra-virgin olive oil Kosher salt and freshly ground pepper 2 hearts romaine lettuce, chopped Whisk the Parmesan, mustard, vinegar and garlic in a small bowl.
