Creamed Spinach 4 servings 1 package (10 ounce size) frozen chopped spinach 2 tablespoons butter 1 1/2 tablespoon flour 1/2 cup heavy cream 1/4 teaspoon salt 1/8 teaspoon black pepper 1/8 teaspoon nutmeg 1/8 teaspoon cayenne pepper Cook spinach following directions on package. Drain and squeeze all liquid from spinach when it's done. Melt butter in saucepan over medium heat. Be careful not to burn it. Add flour to melted butter and stir until smooth. Add cream and heat 2 to 3 minutes or until sauce thickens. Stir constantly so that sauce does not burn. Add spinach, salt, pepper, nutmeg and cayenne. Cook for 2 to 4 minutes, stirring often. Serve hotd warm through. Add the salt, nutmeg and the heavy cream. Mix well. Cook until liquid reduces by half, roughly 3 to 4 minutes. Back to Dinner Recipes |
